Another Decade of Adventure | First Up: Ecuador

This week, my husband and I are reflecting on our first date 10 years ago. As I was headed off to college and he was enlisted in the military, the world of possibilities was wide open for us. As we look back to that night that we spent sitting across the table from one another and talking for hours, we relish the path that we have taken together that has brought us through great adventures and travels, that have challeged us, and the struggles along the way that made use stronger as individuals and as husband and wife. We would have never imagined that we would be reflecting at 10 years while sitting in the middle of Africa! As we look forward to the next decade together, we love the unpredictability of where we will find ourselves in 2025 and what we will have experienced along the way.

Next week, we will embark on our four-continent journey traveling from Rwanda to Ecuador (via Amsterdam and the US) to attend my sister-in-law’s wedding. After a week in Ecuador, we will head back to Virginia to visit with family and friends and finish the trip off with a 24-hour stop to see as many things as we can that Amsterdam has to offer. Others may think we are crazy, but we realize we are young and will bounce back! It’s also a mini trial run for our GRAND Around-the-World trip we are thinking about planning in the future.

Having not visited Ecuador since 2008, my mouth is watering for all my favorites from my past two trips with my husband. The recipe for one of my absolute favorites is already on A Hint of Ginger {Camarones al Ajillo} for you to try yourself at home for a taste of South American cuisine. As we make our journey, I’ll keep you all posted with all the food we are trying and any new favorites along the way….maybe this time I will try cuy, or quinea pig, an Ecuadorian delicacy. We will see just how much I’ve actually been able to overcome my issue with eating food that is looking back at me. Along with the list of food and restaurants I’ve already instructed my husband we have to get, I’m thrilled to have the opportunity to be a part of an Ecuador wedding. I’m a sucker for learning and experiencing new cultures and traditions and this trip is no different.
